A delicious and healthy vegetarian dish featuring pasta shells filled with spinach and ricotta, baked to perfection with melted cheese.

Ingredients

Pasta

  • 12 large pasta shells (cooked al dente)

Vegetables

  • 2 cups fresh spinach, chopped

Cheese

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Other ingredients

  • 1 egg egg
  • 2 cups marinara sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • optional fresh basil for garnish

Instructions 

  • Preheat oven to 375°F (190°C). Cook shells until al dente, then drain.
  • Mix spinach, ricotta, half mozzarella, Parmesan, egg, garlic, onion, salt, and pepper.
  • Spread marinara in a baking dish, stuff shells with filling, and place in dish.
  • Top with remaining marinara and mozzarella, cover, and bake 25 minutes. Uncover and bake 10 more minutes.
  • Let cool slightly, garnish with basil if desired, and serve.

Notes

You can add extra basil or cheese for more flavor.
