A quick and flavorful sheet pan meal featuring crispy roasted gnocchi and colorful vegetables, perfect for a weeknight dinner.

Ingredients

Main

  • 1 pound gnocchi (store-bought)
  • 1 red bell pepper red bell pepper, sliced
  • 1 yellow bell pepper yellow bell pepper, sliced
  • 1 medium zucchini, sliced into half-moons
  • 1 medium red onion, cut into wedges
  • 3 tablespoons olive oil
  • 2 teaspoons italian seasoning
  • to taste salt and pepper salt and pepper

Instructions 

  • Preheat oven to 425°F (220°C).
  • Chop vegetables into bite-sized pieces and toss with gnocchi, olive oil, Italian seasoning, salt, and pepper.
  • Spread on a lined baking sheet in a single layer.
  • Roast for 20-25 minutes, tossing halfway.
  • Serve hot, optionally topped with Parmesan.

Notes

For extra flavor, sprinkle with grated Parmesan before serving.
