Ingredients

Protein

  • 1 pound cooked chicken, shredded
  • 1 cup bbq sauce

Base

  • 1 bag tortilla chips
  • 2 cups shredded cheese (cheddar or a blend)

Vegetables & Beans

  • 1 can black beans, drained and rinsed
  • 1 cup corn (canned or frozen)

Toppings

  • 1 jalapeño sliced (optional)
  • 0.5 cup green onions, chopped
  • 0.25 cup cilantro, chopped
  • 0.5 cup sour cream (for serving)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Mix shredded chicken with BBQ sauce.
  • Spread chips on a sheet pan, top with chicken, beans, corn, and cheese.
  • Add jalapeños if desired, then bake for 10-15 minutes until cheese melts.
  • Garnish with green onions and cilantro, serve with sour cream.

Notes

For extra flavor, add a drizzle of additional BBQ sauce before serving.
