Instructions
Preheat oven to 400°F (200°C). Roast garlic in foil for 30-35 minutes.
Sauté chopped onion in olive oil until translucent.
Squeeze roasted garlic into the pot, add vegetable broth, and simmer for 10 minutes.
Blend the soup until smooth, then stir in heavy cream and season with salt and pepper.
Serve hot, garnished with parsley if desired.
Notes
