A creamy and comforting garlic soup that's simple to prepare and perfect for a cozy meal.

Ingredients

Garlic

  • 1 bulb garlic (whole bulb)
  • 2 tablespoons olive oil
  • 1 medium onion (chopped)
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • to taste salt and pepper (for seasoning)
  • fresh parsley for garnish (optional)

Instructions 

  • Preheat oven to 400°F (200°C). Roast garlic in foil for 30-35 minutes.
  • Sauté chopped onion in olive oil until translucent.
  • Squeeze roasted garlic into the pot, add vegetable broth, and simmer for 10 minutes.
  • Blend the soup until smooth, then stir in heavy cream and season with salt and pepper.
  • Serve hot, garnished with parsley if desired.

Notes

Roasting garlic brings out a sweeter, milder flavor.
