Instructions
Prepare apple filling: zest lemon, squeeze juice, peel and slice apples thinly, then cook with sugars and spices for 20 minutes until tender.
Stir in vanilla, transfer apples to a 9x13 dish, and let cool slightly.
Make cobbler topping: whisk dry ingredients, add buttermilk and egg, cut in butter, then sprinkle over apples.
Bake at 375°F (190°C) for 45-55 minutes until golden and bubbling. Broil briefly for extra crisp if desired.
Let cool for 15 minutes, then serve with vanilla ice cream.
Notes
