A delicious and comforting apple cobbler with a crisp topping, perfect for cozy gatherings or family dessert.

Ingredients

Apple Filling

  • 5 pounds apples (peeled, about 9-11 large apples; use a variety of flavors)
  • 0.5 teaspoon lemon zest (from 1 small lemon)
  • 3 tablespoons lemon juice (from 1 small lemon)
  • 0.75 cup granulated sugar
  • 0.75 cup brown sugar (packed)
  • 5 tablespoons all purpose flour (See notes if making without cooking apples)
  • 1.5 teaspoons cinnamon
  • 0.75 teaspoon nutmeg
  • 0.5 teaspoon cardamom (optional)
  • 0.25 teaspoon kosher salt
  • 1 teaspoon vanilla extract

Cobbler Topping

  • 2.5 cups all purpose flour (spooned and leveled)
  • 1.5 cups granulated sugar
  • 1 teaspoon kosher salt
  • 1 teaspoon baking powder
  • 0.5 cup buttermilk (cheater version okay)
  • 1 egg egg
  • 0.5 cup cold butter (chopped into chunks)
  • 2 tablespoons sugar (granulated or raw) (or both)

For Serving

  • to taste vanilla ice cream (for serving, not optional)

Instructions 

  • Prepare apple filling: zest lemon, squeeze juice, peel and slice apples thinly, then cook with sugars and spices for 20 minutes until tender.
  • Stir in vanilla, transfer apples to a 9x13 dish, and let cool slightly.
  • Make cobbler topping: whisk dry ingredients, add buttermilk and egg, cut in butter, then sprinkle over apples.
  • Bake at 375°F (190°C) for 45-55 minutes until golden and bubbling. Broil briefly for extra crisp if desired.
  • Let cool for 15 minutes, then serve with vanilla ice cream.

Notes

Use a mix of apple varieties for best flavor. Adjust cooking time for desired apple tenderness. Serve warm with ice cream for the best experience.
