Instructions
Peel, boil, and mash the potatoes until smooth.
Mix mashed potatoes with flour, egg, and salt to form a dough.
If sticky, add more flour. Roll out dough into thin noodles and cut into shapes.
Boil noodles in salted water for 3-5 minutes until they float.
Drain and sauté in olive oil or butter for a couple of minutes. Serve warm.
