  • 4 tablespoons pesto
  • 4 ounces fresh mozzarella, sliced
  • 1 large tomato, sliced
  • 2 tablespoons olive oil

Instructions 

  • Preheat oven to 375°F (190°C).
  • Cut a deep pocket into each chicken breast.
  • Season chicken with salt and pepper.
  • Spread 1 tablespoon of pesto inside each pocket.
  • Stuff with mozzarella and tomato slices.
  • Drizzle with olive oil.
  • Bake for 25-30 minutes, until chicken is cooked through (165°F/74°C).
  • Optional: Drizzle with balsamic glaze before serving.
