Rinse the rice under cold water until the water runs clear, then drain.
In a medium saucepan, bring 4 cups of water or halal chicken broth to a boil. Add the rinsed rice, cover, and reduce the heat to low. Cook for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
While the rice is cooking, prepare the chicken. In a large bowl, mix together honey, BBQ sauce, soy sauce, garlic powder, onion powder, and black pepper.
Add the chicken to the bowl and coat it well with the marinade. Let it marinate for at least 15 minutes.
In a large skillet, heat olive oil over medium heat. Add the marinated chicken and cook for 6-7 minutes on each side, or until the chicken is cooked through and has a nice caramelized color.
Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing.
Fluff the cooked rice with a fork and serve it on plates. Top with sliced honey BBQ chicken and garnish with chopped parsley if desired.
Notes
For a spicier kick, add some chili powder to the marinade.
