This Easy Honey BBQ Chicken and Rice recipe combines tender chicken marinated in a sweet and tangy sauce with fluffy rice for a delicious meal.

Ingredients

  • Rinse the rice under cold water until the water runs clear, then drain.
  • In a medium saucepan, bring 4 cups of water or halal chicken broth to a boil. Add the rinsed rice, cover, and reduce the heat to low. Cook for about 18-20 minutes or until the rice is tender and the liquid is absorbed.
  • While the rice is cooking, prepare the chicken. In a large bowl, mix together honey, BBQ sauce, soy sauce, garlic powder, onion powder, and black pepper.
  • Add the chicken to the bowl and coat it well with the marinade. Let it marinate for at least 15 minutes.
  • In a large skillet, heat olive oil over medium heat. Add the marinated chicken and cook for 6-7 minutes on each side, or until the chicken is cooked through and has a nice caramelized color.
  • Once the chicken is cooked, remove it from the skillet and let it rest for a few minutes before slicing.
  • Fluff the cooked rice with a fork and serve it on plates. Top with sliced honey BBQ chicken and garnish with chopped parsley if desired.

Notes

For a spicier kick, add some chili powder to the marinade.
