A nutritious and flavorful bowl combining roasted sweet potatoes, seasoned chicken, and sautéed greens, perfect for a healthy meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts

Vegetables

  • 2 medium sweet potatoes, peeled and diced
  • 2 cups spinach or kale

Seasonings & Oils

  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • to taste salt and pepper

Optional toppings

  • 1 avocado avocado, sliced
  • lemon wedges lemon wedges for serving

Instructions 

  • Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper; roast for 25-30 minutes.
  • Season chicken breasts with salt, pepper, and spices; cook in a skillet over medium heat for 6-7 minutes per side until cooked through.
  • Let chicken rest, then slice. Sauté greens in the same skillet until wilted.
  • Assemble bowls with roasted sweet potatoes, greens, and sliced chicken. Top with avocado and lemon wedges if desired.
