Ingredients

Meat

  • 1 pound lean ground turkey (93/7, or substitute with ground beef)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon oregano, dried
  • 2 tablespoons olive oil or avocado oil
  • 4 cups small diced potatoes
  • 1 cup canned tomato sauce (8 oz)
  • 0.5 cup water
  • 2 teaspoons minced garlic
  • 1 teaspoon oregano, dried
  • 1 teaspoon basil, dried
  • 0.5 teaspoon parsley, dried
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon onion powder

Instructions 

  • Heat oil in a large skillet over medium heat.
  • Add ground turkey and cook until browned, about 5-7 minutes.
  • Add diced potatoes, tomato sauce, water, garlic, and spices. Stir well.
  • Cover and simmer for 15 minutes until potatoes are tender.
  • Adjust seasoning as needed and serve hot.

Notes

For a lower sodium version, reduce added salt and use low-sodium tomato sauce.
