Ingredients

Tortillas

  • 2 pieces large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 0.5 cup cooked rice
  • 0.5 cup black beans, rinsed and drained
  • 0.25 cup diced tomatoes
  • 1 tablespoon butter
  • to taste salt and pepper

Instructions 

  • Mix cheeses, rice, beans, tomatoes, salt, and pepper.
  • Spread half of mixture on one tortilla, fold, and roll.
  • Repeat with second tortilla.
  • Heat skillet, melt butter, place burritos seam side down.
  • Cook 3-4 minutes per side until golden and cheese melts.
  • Slice and serve hot.
