Ingredients

Pasta

  • 8 oz whole grain pasta
  • 2 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions 

  • Cook pasta according to package; drain and set aside.
  • Heat olive oil in a skillet; cook seasoned chicken 5-7 mins per side, then rest.
  • Sauté garlic in the same skillet 1 min, add broccoli and tomatoes; cook 3-4 mins.
  • Slice chicken, add to skillet with pasta, Parmesan, and red pepper flakes; toss to combine.
  • Serve hot, garnished with parsley.

Notes

For extra flavor, add a squeeze of lemon before serving.
