Easy Garlic Parmesan Chicken Pasta Recipe for a Healthy Dinner

A quick and healthy pasta dish featuring tender chicken, fresh vegetables, and a flavorful garlic Parmesan sauce.

Ingredients

Pasta

  • 8 oz whole wheat pasta

Chicken

  • 2 pieces boneless, skinless chicken breasts

Oil

  • 3 tablespoons olive oil

Garlic

  • 4 cloves garlic, minced

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup spinach

Cheese

  • 1/2 cup grated parmesan cheese

Seasonings

  • to taste salt and pepper

Garnish

  • optional fresh parsley (for garnish)

Instructions 

  • Cook pasta according to package instructions. Drain and set aside.
  • Season chicken with salt and pepper. Cook in a skillet with 2 tbsp olive oil for 6-7 minutes per side. Rest and slice.
  • In the same skillet, sauté garlic in remaining olive oil for 1 minute. Add cherry tomatoes and cook 2-3 minutes.
  • Stir in spinach until wilted. Add cooked pasta and toss. Top with sliced chicken and Parmesan cheese. Garnish with parsley if desired.

Notes

Use fresh garlic for best flavor. Adjust seasoning to taste.
