A quick and healthy pasta dish featuring tender chicken, fresh vegetables, and a flavorful garlic Parmesan sauce.

Ingredients

Pasta

  • 8 oz whole wheat pasta

Protein

  • 2 pieces boneless, skinless chicken breasts

Oils and Aromatics

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced

Vegetables

  • 1 cup cherry tomatoes, halved
  • 1 cup spinach

Cheese

  • 1/2 cup grated parmesan cheese

Seasonings

  • to taste salt and pepper

Garnish

  • optional fresh basil (for garnish)

Instructions 

  • Cook pasta according to package; drain.
  • Season chicken with salt and pepper; cook in skillet with olive oil until done. Rest and slice.
  • Sauté garlic in same skillet, add tomatoes and spinach; cook until wilted.
  • Add chicken and pasta to skillet, sprinkle Parmesan, toss to combine.
  • Garnish with basil if desired; serve warm.

Notes

Use fresh basil for best flavor and adjust seasoning as needed.
