  • 1.5 pounds flank steak or skirt steak (thinly sliced)
  • 3 bell peppers (red, green, yellow, sliced into strips)
  • 1 large onion (sliced into strips)
  • 3 cloves garlic (minced)
  • 0.25 cup lime juice (about 2 limes)
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 0.5 teaspoon oregano
  • 0.5 teaspoon salt (adjust to taste)
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon crushed red pepper flakes (optional for heat)
  • 2 tablespoons olive oil
  • 0.25 cup beef broth or water
  • Tortillas
  • Optional toppings (sliced avocado, sour cream, shredded cheese, fresh cilantro, lime wedges)

Instructions 

  • Prepare the Spice Mix: Combine chili powder, cumin, paprika, oregano, salt, black pepper, and crushed red pepper flakes (optional).
  • Season the Steak: Place sliced steak in a bowl, sprinkle with spice mix, and toss to coat.
  • Layer the Veggies: In your Crock-Pot, add bell peppers, onion, and minced garlic.
  • Add the Steak: Layer the seasoned steak on top of the veggies in the Crock-Pot.
  • Add Liquids: Drizzle lime juice and olive oil over everything, then pour in beef broth or water.
  • Cook It Up: Cover and cook on low for 6-8 hours or on high for 3-4 hours until steak is tender.
  • Stir and Serve: Stir to combine juices and flavors. Serve hot with warm tortillas and toppings.

Notes

For extra flavor, marinate the steak with the spice mix for at least 30 minutes before cooking.
