Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 1/2 cup chipotle ranch dressing

Carbohydrates

  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained

Dairy

  • 1 cup shredded cheese (cheddar or monterey jack)

Vegetables

  • 1 cup lettuce, shredded
  • 1 piece tomato, diced

Other

  • 4 large flour tortillas
  • to taste salt and pepper
  • for grilling olive oil

Instructions 

  • Marinate chicken in dressing for 30 mins, then grill with olive oil, salt, and pepper until cooked through.
  • Let chicken rest, then slice into strips.
  • Warm tortillas, then layer with rice, beans, chicken, cheese, lettuce, and tomato.
  • Fold and roll the burritos tightly, then serve immediately or grill for a crispy finish.

Notes

For extra flavor, add a squeeze of lime or hot sauce before serving.
