Instructions
Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent, then add sausage and cook until browned.
Stir in garlic and Italian seasoning; cook for 1 minute. Add diced tomatoes, chicken broth, and pasta. Bring to a boil.
Reduce heat, cover, and simmer for 10-12 minutes until pasta is al dente, stirring occasionally.
Stir in spinach and half of the mozzarella; cook until spinach wilts and cheese melts. Season with salt and pepper.
Top with remaining mozzarella, cover, and cook until cheese is bubbly. Serve warm.
Notes
For extra flavor, sprinkle with fresh herbs or red pepper flakes before serving.
