This quick and hearty skillet pasta combines sausage, cheese, and vegetables for a delicious 30-minute meal perfect for busy weeknights.

Ingredients

pasta

  • 8 oz pasta (penne or rotini)

meat

  • 1 lb italian sausage (mild or spicy, removed from casings)

vegetables

  • 1 medium onion, diced
  • 2 cloves garlic, minced

canned goods

  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups chicken broth

cheese

  • 1 cup shredded mozzarella cheese

greens

  • 1 cup spinach (fresh or frozen)

seasonings

  • 1 tsp italian seasoning

  • to taste salt and pepper
  • olive oil for cooking olive oil

Instructions 

  • Heat olive oil in a large skillet over medium heat. Sauté diced onion until translucent, then add sausage and cook until browned.
  • Stir in garlic and Italian seasoning; cook for 1 minute. Add diced tomatoes, chicken broth, and pasta. Bring to a boil.
  • Reduce heat, cover, and simmer for 10-12 minutes until pasta is al dente, stirring occasionally.
  • Stir in spinach and half of the mozzarella; cook until spinach wilts and cheese melts. Season with salt and pepper.
  • Top with remaining mozzarella, cover, and cook until cheese is bubbly. Serve warm.

Notes

For extra flavor, sprinkle with fresh herbs or red pepper flakes before serving.
