Delight in these soft, chewy cookies infused with warm spices and bits of apple, perfect for a cozy treat.

Ingredients

Dough

  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar, packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 3 cups old-fashioned rolled oats
  • 1.5 cups peeled and finely diced apples (about 1 medium apple)
  • 0.5 cup chopped walnuts or pecans (optional)

Garnish

  • Powdered sugar or coarse sugar for garnish (optional)

Instructions 

  • Preheat oven to 350°F (175°C) and line baking sheets with parchment.
  • Cream butter, brown sugar, and granulated sugar until fluffy. Beat in eggs and vanilla.
  • Mix dry ingredients and gradually add to wet mixture. Fold in oats, apples, and nuts.
  • Drop tablespoons of dough onto sheets, bake for 12-15 minutes until golden.
  • Cool cookies on racks, then sprinkle with sugar if desired. Serve once cooled.

Notes

For extra flavor, add a pinch of salt on top before baking.
