Instructions
Preheat oven to 350°F (175°C) and line baking sheets with parchment.
Cream butter, brown sugar, and granulated sugar until fluffy. Beat in eggs and vanilla.
Mix dry ingredients and gradually add to wet mixture. Fold in oats, apples, and nuts.
Drop tablespoons of dough onto sheets, bake for 12-15 minutes until golden.
Cool cookies on racks, then sprinkle with sugar if desired. Serve once cooled.
Notes
For extra flavor, add a pinch of salt on top before baking.
