This easy crockpot recipe combines tender chicken with sweet pineapple and savory teriyaki sauce for a delicious, hassle-free meal.

Ingredients

Protein

  • 2 lbs boneless, skinless chicken thighs
  • 1 cup teriyaki sauce
  • 1 cup pineapple chunks (canned or fresh)
  • 1 piece bell pepper (sliced)
  • 1 piece onion (sliced)
  • 2 cloves garlic (minced)
  • 1 teaspoon ginger (minced)
  • 1 tablespoon sesame seeds (optional)
  • cooked rice for serving
  • chopped green onions for garnish (optional)

Instructions 

  • Place chicken thighs in the crockpot.
  • Add sauce, pineapple, peppers, onion, garlic, and ginger; stir to combine.
  • Cook on low for 6-8 hours or high for 3-4 hours.
  • Shred chicken and stir back into sauce.
  • Serve over rice, garnished with sesame seeds and green onions if desired.

Notes

For extra flavor, marinate the chicken in some sauce before cooking.
