Ingredients

Salmon

  • 4 pieces salmon fillets
  • 0.25 cup bbq sauce

Sweet Potatoes

  • 2 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • to taste salt and pepper

Garnish

  • optional fresh parsley (for garnish)

Instructions 

  • Preheat oven to 400°F (200°C).
  • Cube sweet potatoes, toss with olive oil, garlic powder, paprika, salt, and pepper, then bake for 15 minutes.
  • Brush salmon fillets with BBQ sauce and place on a baking sheet.
  • Remove sweet potatoes after 15 minutes, stir, then bake salmon for another 12-15 minutes.
  • Serve salmon with roasted sweet potatoes, garnished with parsley if desired.
