A flavorful and creamy peri-peri chicken served over tender rice, perfect for a satisfying meal.

Ingredients

Protein

  • 4 pieces chicken breasts
  • 2 tablespoons peri-peri sauce
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 piece onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup long-grain rice
  • 2 cups water
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions 

  • Marinate chicken in peri-peri sauce for 30 minutes.
  • Cook onion and garlic in olive oil until translucent, then add chicken and brown on both sides.
  • Add chicken broth, simmer for 15 minutes, then remove chicken.
  • Stir in heavy cream and simmer until sauce thickens, then slice chicken and return to sauce.
  • Cook rice in water until tender, then serve chicken over rice garnished with parsley.

Notes

For extra flavor, marinate the chicken longer or add a dash of hot sauce.
