A hearty and flavorful vegetarian baked spaghetti that's easy to prepare and perfect for a comforting meal.
Ingredients
Pasta

spaghetti (whole wheat or regular)

extra virgin olive oil
Vegetables

bell peppers (1 red, 1 yellow), chopped

zucchini, sliced

fresh spinach

marinara sauce

shredded mozzarella cheese
Instructions
Preheat oven to 350°F (175°C). Cook spaghetti until al dente, then drain.
Sauté bell peppers and zucchini in olive oil until softened; add spinach until wilted.
Mix cooked pasta with sautéed vegetables and marinara sauce.
Layer half in a baking dish, top with cheese, add remaining mixture, then more cheese.
Bake for 25 minutes until bubbly and golden.
