A hearty and flavorful vegetarian baked spaghetti that's easy to prepare and perfect for a comforting meal.

Ingredients

Pasta

  • 12 ounces spaghetti (whole wheat or regular)
  • 2 tablespoons extra virgin olive oil

Vegetables

  • 2 medium bell peppers (1 red, 1 yellow), chopped
  • 1 medium zucchini, sliced
  • 2 cups fresh spinach
  • 24 ounces marinara sauce
  • 2 cups shredded mozzarella cheese

Instructions 

  • Preheat oven to 350°F (175°C). Cook spaghetti until al dente, then drain.
  • Sauté bell peppers and zucchini in olive oil until softened; add spinach until wilted.
  • Mix cooked pasta with sautéed vegetables and marinara sauce.
  • Layer half in a baking dish, top with cheese, add remaining mixture, then more cheese.
  • Bake for 25 minutes until bubbly and golden.
