A flavorful and easy-to-make dish featuring tender chicken, jasmine rice, and colorful vegetables, perfect for a satisfying meal.

Ingredients

Rice and Water

  • 2 cups jasmine rice
  • 4 cups water

Chicken and Marinade

  • 1 lb chicken thighs, boneless and skinless
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 tablespoon sesame oil

Vegetables

  • 1 cup broccoli florets
  • 1 carrot julienned carrot
  • 2 green onions chopped green onions
  • sesame seeds for garnish sesame seeds

Instructions 

  • Rinse rice, then cook with water until tender, about 15 minutes.
  • Mix soy sauce, honey, garlic, ginger, and sesame oil to make marinade.
  • Marinate chicken for at least 30 minutes, then cook in skillet until caramelized, about 6-7 minutes per side.
  • Sauté broccoli and carrot until tender, 3-4 minutes.
  • Assemble bowls with rice, sliced chicken, vegetables, and garnish with green onions and sesame seeds.

Notes

For extra flavor, sprinkle additional sesame seeds or drizzle with more honey.
