8ouncesbittersweet chocolate(at least 60% cacao, chopped)
0.5cupunsalted butter(cut into pieces)
3large eggs(separated)
0.25cupgranulated sugar
1teaspoonvanilla extract
Instructions
Preheat oven to 350°F (175°C). Grease and line an 8-inch cake pan.
Melt chocolate and butter until smooth; let cool slightly.
Whisk egg yolks and sugar until pale yellow. Stir in vanilla to chocolate mixture.
Fold chocolate mixture into egg yolk mixture.
Beat egg whites until stiff peaks form.
Fold egg whites into chocolate batter in two additions.
Pour batter into prepared pan.
Bake for 25-30 minutes. Center will look soft.
Cool completely in pan.
Invert onto plate and dust with powdered sugar.

For an extra rich flavor, use high-quality dark chocolate with a cacao content of 70% or higher.
