A creamy and delicious dairy-free take on the popular Marry Me Chicken Pasta. This recipe uses coconut milk for a rich and flavorful sauce that everyone will love.

Ingredients

Chicken

  • 1 lb boneless, skinless chicken breasts (halved horizontally)

Seasoning

  • to taste Salt
  • to taste pepper

Sauce

  • 2 tbsp olive oil
  • 1 small onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • 1 cup canned coconut milk (full fat for creaminess)
  • 1/2 cup sun-dried tomatoes (chopped)
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes

Pasta

  • 10 oz gluten-free pasta (of your choice)

Garnish

  • Fresh basil (for garnish)

Instructions 

  • Season chicken with salt and pepper.
  • Sear chicken in olive oil until cooked through. Set aside.
  • Sauté onion and garlic until softened. Add chicken broth, coconut milk, sun-dried tomatoes, oregano, and red pepper flakes. Simmer.
  • Cook pasta according to package directions.
  • Add cooked pasta and chicken to the sauce. Toss to combine.
  • Garnish with fresh basil and serve.

Notes

For a richer flavor, use high-quality sun-dried tomatoes packed in oil.
