A creamy, cheesy scalloped potato dish cooked effortlessly in your slow cooker, perfect for family dinners or gatherings.

Ingredients

Potatoes

  • 3 lbs Yukon gold potatoes (about 6 medium), sliced 1/8” thick
  • 1 unit onion, thinly sliced
  • 3 cups whole milk
  • 3 Tbsp cornstarch (heaping)
  • 2 Tbsp prepared yellow mustard
  • 2.5 tsp salt
  • 0.75 tsp black pepper
  • 8 oz white cheddar cheese, freshly grated

Instructions 

  • Spray the slow cooker with nonstick spray or butter.
  • Layer ⅓ of onions, potatoes, and cheese; repeat twice, ending with cheese.
  • Whisk milk, cornstarch, mustard, salt, and pepper until smooth.
  • Pour mixture over layers in the crock pot.
  • Cook on HIGH 3–4 hours or LOW 6–7 hours until tender and bubbly.
  • Rest 20 minutes before serving to thicken sauce.

Notes

For extra flavor, add a sprinkle of paprika or chopped herbs before serving.
