A creamy, cheesy scalloped potato dish cooked effortlessly in your slow cooker, perfect for family dinners or gatherings.
Ingredients

Yukon gold potatoes (about 6 medium), sliced 1/8” thick

onion, thinly sliced

whole milk

cornstarch (heaping)

prepared yellow mustard

Instructions
Spray the slow cooker with nonstick spray or butter.
Layer ⅓ of onions, potatoes, and cheese; repeat twice, ending with cheese.
Whisk milk, cornstarch, mustard, salt, and pepper until smooth.
Pour mixture over layers in the crock pot.
Cook on HIGH 3–4 hours or LOW 6–7 hours until tender and bubbly.
Rest 20 minutes before serving to thicken sauce.
Notes
For extra flavor, add a sprinkle of paprika or chopped herbs before serving.
