1lbboneless, skinless chicken breasts
Seasoning
2tablespoonsolive oil
1tablespoonCajun seasoning
1teaspoongarlic powder
1teaspoononion powder
1/2teaspoonsmoked paprika
1/2teaspoonsalt
1/4teaspoonblack pepper
Vegetables & Other
1bell pepper, sliced (any color)
1smallonion, thinly sliced
3clovesgarlic, minced
1(14.5 oz) candiced tomatoes, with juices
1cupchicken broth
1/2cupheavy cream
1/2cupgrated Parmesan cheese
8ozpenne pasta (or pasta of choice)
Fresh parsley, chopped for garnish
Instructions
Season chicken with olive oil, Cajun seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper.
Lightly brown chicken in a skillet, 2-3 minutes per side.
Place chicken in the bottom of the slow cooker.
Add bell pepper, onion, and garlic on top of the chicken.
Pour in diced tomatoes and chicken broth.
Cook on low for 4-5 hours or on high for 2-3 hours.
Remove and shred chicken, then return to the crock pot.
Stir in heavy cream and Parmesan cheese until melted.
Cook pasta, drain, and add to the crock pot.
Heat together for 15-20 minutes on low.
Serve hot, garnished with parsley.
