A hearty and flavorful beef stew made in a crock pot, perfect for a comforting meal.

Ingredients

Instructions 

  • In a large skillet, heat olive oil over medium-high heat. Add the beef stew meat and brown on all sides.
  • Transfer the browned beef to the crock pot.
  • In the same skillet, add onion and garlic; sauté until softened, about 2-3 minutes.
  • Add the sautéed onion and garlic to the crock pot with the beef.
  • Layer the carrots, potatoes, and frozen peas over the beef and onions in the crock pot.
  • In a bowl, mix together the beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and pepper.
  • Pour the mixture over the ingredients in the crock pot and add the bay leaf.
  • Cover and cook on low for 7-8 hours or on high for 4-5 hours, until the beef is tender.
  • Remove bay leaf before serving and adjust seasoning if necessary.

Notes

For a thicker stew, you can add a cornstarch slurry during the last hour of cooking.
