  • 2 tablespoons olive oil
  • 4 cups fresh spinach (About 120 g.)
  • 4 ounces feta cheese, crumbled (About 115 g.)
  • 2 cloves garlic, minced
  • Salt (To taste.)
  • Black pepper (To taste.)
  • 1 teaspoon red pepper flakes (Optional, for heat.)

Instructions 

  • Boil gnocchi until they float, then drain.
  • Heat olive oil, add gnocchi, and cook until golden brown on one side (2-3 minutes).
  • Stir and cook gnocchi until crispy on all sides (2-3 minutes).
  • Reduce heat, add garlic, and sauté until fragrant (about 1 minute).
  • Add spinach and stir until wilted (2-3 minutes).
  • Season with salt, pepper, and red pepper flakes (if using). Remove from heat.
  • Stir in feta cheese and serve immediately.

Notes

For extra flavor, add a squeeze of lemon juice before serving.
