These fritters are a delicious and easy way to get your veggies in! Crispy on the outside and tender on the inside, they're perfect as an appetizer or a light meal.

Ingredients

Fritters

  • 2 cups cooked shredded chicken
  • 1 cup finely chopped broccoli florets
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup breadcrumbs
  • 2 large eggs
  • 0.25 cup grated Parmesan cheese
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions 

  • Combine chicken, broccoli, cheddar, breadcrumbs, eggs, Parmesan, garlic powder, onion powder, salt, and pepper in a bowl.
  • Heat olive oil in a skillet over medium heat.
  • Form mixture into small patties.
  • Fry fritters for 3-4 minutes per side until golden brown.
  • Remove fritters and place on paper towels.
  • Serve warm with your favorite dipping sauce.

Notes

For extra flavor, add a pinch of red pepper flakes to the mixture.
