A delicious and creamy yellow squash casserole topped with crunchy Ritz crackers, perfect for a comforting family meal.

Ingredients

Dairy

  • 2 tablespoons butter
  • 4 cups yellow squash, sliced
  • 1 medium onion, chopped
  • 2 large eggs
  • 1 cup cheddar cheese, grated
  • 1 cup milk
  • 2 tablespoons butter
  • 0.25 teaspoon cayenne pepper (optional)
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon black pepper, ground

Ritz Crackers

  • 1 sleeve Ritz crackers

Instructions 

  • Preheat oven to 375°F (190°C).
  • Melt 2 tablespoons butter and sauté chopped onion until translucent.
  • In a bowl, whisk eggs, milk, grated cheese, cayenne, salt, and pepper. Add cooked onions and sliced squash, mix well.
  • Pour mixture into a greased baking dish. Top with crushed Ritz crackers and dot with remaining butter.
  • Bake for 30 minutes until golden and bubbly. Serve warm.

Notes

For a healthier version, reduce cheese and butter slightly.
