Instructions
Preheat oven to 375°F (190°C).
Melt 2 tablespoons butter and sauté chopped onion until translucent.
In a bowl, whisk eggs, milk, grated cheese, cayenne, salt, and pepper. Add cooked onions and sliced squash, mix well.
Pour mixture into a greased baking dish. Top with crushed Ritz crackers and dot with remaining butter.
Bake for 30 minutes until golden and bubbly. Serve warm.
