A comforting and nutritious creamy vegetable soup, perfect for a chilly day. Packed with fresh vegetables and a touch of cream for a rich flavor.

Ingredients

Vegetables

  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 2 carrots (chopped)
  • 2 celery stalks (chopped)
  • 2 cloves garlic (minced)
  • 4 cups vegetable broth
  • 1 cup chopped potatoes
  • 1 cup chopped broccoli florets
  • 1/2 cup frozen peas
  • 1/2 cup heavy cream
  • Salt and pepper (to taste)
  • Fresh parsley (chopped, for garnish (optional))

Instructions 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  • Add garlic and cook for 1 minute more.
  • Pour in vegetable broth and add potatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add broccoli and peas and cook for another 5 minutes, or until vegetables are tender.
  • Stir in heavy cream and heat through. Do not boil.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh parsley if desired.

Notes

For a vegan option, substitute the heavy cream with coconut cream or cashew cream.
