0.5cupgrated Parmesan cheese
0.25cupchopped fresh basil
2cupsbaby spinach
Instructions
Preheat oven to 300°F (150°C).
Toss tomatoes, garlic, olive oil, oregano, red pepper flakes, salt, and pepper in a bowl.
Spread tomato mixture on a baking sheet.
Slow roast for 2-2.5 hours, until tomatoes are softened.
Cook pasta, reserving 1 cup of pasta water.
Transfer tomatoes to a skillet, mash some tomatoes.
Add heavy cream and Parmesan cheese, stir until melted.
Add pasta and spinach to the sauce, toss. Add pasta water if needed.
Stir in fresh basil. Season with salt and pepper.
Serve immediately.
