  • 2 lbs cherry tomatoes (halved)
  • 6 cloves garlic (minced)
  • 0.25 cup olive oil
  • 1 tsp dried oregano
  • 0.5 tsp red pepper flakes (optional)
  • Salt and pepper (to taste)
  • 1 lb pasta (such as penne or spaghetti)
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup chopped fresh basil
  • 2 cups baby spinach

Instructions 

  • Preheat oven to 300°F (150°C).
  • Toss tomatoes, garlic, olive oil, oregano, red pepper flakes, salt, and pepper in a bowl.
  • Spread tomato mixture on a baking sheet.
  • Slow roast for 2-2.5 hours, until tomatoes are softened.
  • Cook pasta, reserving 1 cup of pasta water.
  • Transfer tomatoes to a skillet, mash some tomatoes.
  • Add heavy cream and Parmesan cheese, stir until melted.
  • Add pasta and spinach to the sauce, toss. Add pasta water if needed.
  • Stir in fresh basil. Season with salt and pepper.
  • Serve immediately.

Notes

For a richer flavor, use high-quality olive oil and Parmesan cheese.
