  • 2 large boneless, skinless chicken breasts (or 4 small)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup orzo pasta
  • 0.5 cup sun-dried tomatoes, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 cups fresh spinach, chopped
  • 0.5 teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions 

  • Season chicken with salt, pepper, garlic powder, and Italian seasoning.
  • Sear chicken in olive oil for 5-6 minutes per side until cooked. Remove and set aside.
  • Sauté minced garlic in butter until fragrant.
  • Stir in orzo and cook for 1-2 minutes.
  • Stir in sun-dried tomatoes and chicken broth. Simmer.
  • Cover and cook for 10 minutes, until orzo is tender.
  • Pour in heavy cream and Parmesan cheese until melted.
  • Add spinach and stir until wilted.
  • Place chicken back in skillet and spoon sauce over. Simmer for 2 minutes.
  • Sprinkle with Parmesan and serve warm.

Notes

Adjust the amount of red pepper flakes to your spice preference.
