A delicious and creamy vegan pasta dish featuring sun-dried tomatoes and aromatic herbs, perfect for a quick and satisfying meal.

Ingredients

Pasta

  • 200 g pasta of choice
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup coconut cream or cashew cream
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper
  • for garnish fresh basil leaves

Instructions 

  • Cook pasta until al dente, then drain and set aside.
  • Heat olive oil in a skillet and sauté garlic until fragrant.
  • Add sun-dried tomatoes and cook for 2-3 minutes.
  • Stir in coconut or cashew cream, basil, and oregano; simmer for 5 minutes.
  • Add cooked pasta, toss to coat, season with salt and pepper, then serve garnished with basil.

Notes

You can substitute coconut cream with cashew cream for a nutty flavor.
