A quick and delicious chicken dish loaded with spinach, artichokes, and creamy cheeses, perfect for a fast weeknight dinner.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts

Vegetables

  • 1 cup fresh spinach, chopped
  • 1 can (14 oz) artichoke hearts, drained and chopped

Dairy

  • 1/2 cup cream cheese, softened
  • 1/2 cup grated parmesan cheese
  • 1/2 cup mozzarella cheese, shredded

Other

  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • to taste salt and pepper (for seasoning)
  • optional for heat red pepper flakes (garnish if desired)

Instructions 

  • Heat olive oil in a skillet, season chicken, and cook 5-6 minutes per side until done. Remove and set aside.
  • Sauté garlic in the same skillet for 30 seconds, then add spinach and artichokes, cooking 2-3 minutes.
  • Lower heat, stir in cream cheese, Parmesan, and half the mozzarella until melted.
  • Slice chicken, return to skillet, coat with sauce, sprinkle remaining mozzarella, cover, and cook 1 minute.
  • Serve hot, garnished with red pepper flakes if desired.
