Ingredients

Noodles

  • 9 pieces lasagna noodles
  • 2 tablespoons olive oil
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 10 ounces fresh spinach
  • 15 ounces ricotta cheese
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups marinara sauce
  • 1/2 cup heavy cream

Instructions 

  • Preheat oven to 375°F (190°C). Cook noodles, then set aside.
  • Sauté onion, garlic, and mushrooms until tender. Add spinach and cook until wilted.
  • Mix ricotta, half of mozzarella, Parmesan, oregano, salt, and pepper.
  • Layer sauce, noodles, ricotta mixture, spinach, and mushrooms. Repeat layers.
  • Top with remaining noodles, sauce, heavy cream, and mozzarella. Bake covered 25 mins, then uncovered 15 mins.

Notes

Let the lasagna rest for a few minutes before slicing for cleaner servings.
