A rich and creamy side dish featuring tender Yukon gold potatoes baked to perfection with garlic, cheese, and herbs.

Ingredients

  • 5 pounds Yukon gold potatoes
  • 2 tablespoons unsalted butter
  • 2 cloves garlic (minced)
  • 1 tablespoon all-purpose flour
  • 1 cup heavy cream (or whole milk)
  • 1/2 cup Parmesan cheese (optional)
  • 1 teaspoon fresh thyme
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper

Instructions 

  • Preheat oven to 400°F and grease a baking dish.
  • Slice potatoes thinly and set aside.
  • Melt butter, sauté garlic, stir in flour, then whisk in cream until thickened.
  • Mix potatoes with sauce, layer in dish, top with cheese if desired.
  • Cover with foil, bake 30 mins, uncover and bake 30 mins until golden.

Notes

For extra flavor, add a pinch of nutmeg or paprika before baking.
