Ingredients

Protein

  • 1 pound chicken breasts (cut into bite-sized pieces)

Vegetables

  • 2 cups broccoli florets

Grains

  • 1 cup uncooked rice

Broth & Dairy

  • 3 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese

Oils & Aromatics

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced

Spices

  • 1 teaspoon italian seasoning
  • to taste salt and pepper

Instructions 

  • Heat olive oil in a skillet, cook chicken until browned, then set aside.
  • Sauté garlic, add rice, toast for 1-2 minutes, then pour in broth and simmer for 15 minutes.
  • Stir in broccoli, return chicken, add cream and Parmesan, cook until heated through and broccoli is tender.
