  • 1 pound mushrooms, sliced
  • 1 onion onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • to taste salt and pepper
  • for garnish fresh parsley

Instructions 

  • Melt butter in a large pot over medium heat.
  • Sauté onion and garlic until translucent.
  • Add mushrooms and cook until soft and browned.
  • Pour in broth, bring to boil, then simmer for 15 minutes.
  • Blend soup until smooth, then stir in cream and season.
  • Heat through, garnish with parsley, and serve hot.

Notes

For a thicker soup, blend more mushrooms or add a splash of flour.
