  • 2 cups cooked chicken, shredded
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 1 cup cream of mushroom soup
  • 1 cup frozen mixed vegetables
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • 1 tablespoon olive oil

Instructions 

  • Preheat oven to 350°F (175°C).
  • Mix chicken, rice, broth, soup, vegetables, garlic, onion, salt, and pepper.
  • Pour into a greased 9x13 inch dish and cover with foil.
  • Bake for 45 minutes, then uncover, add cheese, and bake 10-15 minutes more.
  • Let cool briefly before serving.

Notes

Use cooked chicken for convenience and adjust seasoning to taste.
