Ingredients

Pasta

  • 12 oz penne pasta
  • 1 lb smoked sausage (sliced)

Vegetables and aromatics

  • 1 tbsp olive oil
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 bell pepper bell pepper (diced)

Canned Goods

  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 teaspoons cajun seasoning
  • to taste salt and pepper
  • 1 cup shredded cheese (optional)

Garnish

  • fresh parsley for garnish

Instructions 

  • Heat olive oil in a large pot, cook sausage until browned.
  • Add onion, bell pepper, and garlic; sauté until softened.
  • Stir in tomatoes, broth, and Cajun seasoning; bring to a boil, then add pasta.
  • Simmer uncovered for 12-15 minutes until pasta is al dente, then stir in cream and cheese if using.
  • Season with salt and pepper, garnish with parsley, and serve.

Notes

For a spicier kick, add more Cajun seasoning or hot sauce.
