Ingredients

Bell Peppers

  • 1 cup cooked rice
  • 1 pound ground beef (or turkey)
  • 1 can (15 oz) diced tomatoes
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon italian seasoning
  • to taste salt and pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • for cooking olive oil

Instructions 

  • Preheat oven to 375°F (190°C). Cut tops off peppers, remove seeds, and place in baking dish.
  • Cook onion and garlic in olive oil until softened. Add ground meat, cook until browned, then stir in rice, tomatoes, seasoning, salt, and pepper. Simmer 5 minutes.
  • Stuff peppers with meat mixture, top with cheese, cover with foil, and bake 30 minutes. Remove foil and bake 10-15 minutes until cheese melts.
  • Let cool briefly, then serve. Enjoy your hearty stuffed peppers!
