Bell Peppers
1cupcooked rice
1poundground beef (or turkey)
1can (15 oz)diced tomatoes
1smallonion, chopped
2clovesgarlic, minced
1teaspoonitalian seasoning
to tastesalt and pepper
1cupshredded cheese (cheddar or mozzarella)
for cookingolive oil
Instructions
Preheat oven to 375°F (190°C). Cut tops off peppers, remove seeds, and place in baking dish.
Cook onion and garlic in olive oil until softened. Add ground meat, cook until browned, then stir in rice, tomatoes, seasoning, salt, and pepper. Simmer 5 minutes.
Stuff peppers with meat mixture, top with cheese, cover with foil, and bake 30 minutes. Remove foil and bake 10-15 minutes until cheese melts.
Let cool briefly, then serve. Enjoy your hearty stuffed peppers!
