These fudgy cottage cheese brownies are a healthy and delicious treat. They're easy to make and packed with protein!

  • 1 cup cottage cheese
  • 0.5 cup unsweetened cocoa powder
  • 0.5 cup granulated sugar
  • 0.25 cup honey or maple syrup
  • 2 large eggs
  • 0.33 cup all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon vanilla extract
  • 0.25 cup chocolate chips ((optional))

Instructions 

  • Preheat oven to 350°F (175°C) and grease an 8×8-inch baking pan.
  • Blend cottage cheese until smooth.
  • Add sugar, honey/maple syrup, and vanilla to cottage cheese and mix.
  • Add eggs one at a time, mixing well after each.
  • Whisk together cocoa powder, flour, and baking powder.
  • Combine dry ingredients with the wet mixture until just incorporated.
  • Fold in chocolate chips if using.
  • Pour batter into pan and spread evenly.
  • Bake for 25-30 minutes, checking with a toothpick.
  • Let cool in pan for 10 minutes, then transfer to wire rack to cool completely.

Notes

For a richer flavor, use dark chocolate chips.
