Instructions
In a large mixing bowl, combine the fresh corn kernels, cherry tomatoes, red onion, green bell pepper, and cilantro.
In a separate small bowl, whisk together the olive oil, lime juice, honey, salt, and pepper until well combined.
Pour the dressing over the corn salad mixture and toss gently to coat all the ingredients evenly.
Taste and adjust seasoning if necessary, then let the salad sit for about 10 minutes to allow the flavors to meld.
