Ingredients

Bread

  • 8 slices cinnamon swirl bread, cut into 2.5 cm cubes
  • 3 large eggs
  • 2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1 cup granulated sugar
  • 1/4 cup water
  • 6 tablespoons unsalted butter
  • 1/2 cup heavy cream
  • 1/4 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9x9-inch dish and arrange bread cubes.
  • Whisk eggs, milk, cream, sugar, butter, vanilla, cinnamon, and salt until combined. Pour over bread and soak for 10 minutes.
  • Bake for 40-45 minutes until set and golden.
  • Make caramel: combine sugar and water, cook until deep amber, then whisk in butter, cream, salt, and vanilla.
  • Cool bread pudding for 10 minutes, drizzle with warm caramel before serving.

Notes

Serve warm with extra caramel for an indulgent dessert.
