Ingredients

Batter

  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar
  • 0.5 cup light brown sugar, packed
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup unsalted butter, melted
  • 0.5 cup sour cream
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups diced apples (such as Granny Smith or Honeycrisp)
  • 0.5 cup chopped walnuts or pecans (optional)

Crisp Topping

  • 0.5 cup all-purpose flour
  • 0.25 cup light brown sugar, packed
  • 0.5 teaspoon ground cinnamon
  • 0.25 cup unsalted butter, diced

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin.
  • Mix dry ingredients in a large bowl. Whisk wet ingredients in another bowl.
  • Combine wet and dry, fold in apples and nuts. Prepare crisp topping.
  • Divide batter into muffin cups, add topping, and bake 18-22 minutes.
  • Cool muffins in tin 5 minutes, then transfer to wire rack.

Notes

For extra flavor, sprinkle with a little cinnamon before baking.
