A hearty, cheesy pasta dish with a spicy kick, perfect for a comforting meal.

Ingredients

  • 1 lbs. ground beef (80% lean)
  • 1 small onion (diced)
  • 0.5 cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1.25 oz. chili seasoning mix (see notes for homemade seasoning)
  • 1 tablespoon tomato paste
  • 8 oz. tomato sauce
  • 14.5 oz. diced tomatoes (undrained)
  • 0.5 cup chicken broth (can sub beef broth)
  • 1 can kidney beans, drained
  • 2 cups macaroni (uncooked)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 0.5 cup heavy cream
  • 1 cup milk
  • 0.5 teaspoon mustard powder
  • 0.25 teaspoon onion powder
  • 0.25 teaspoon salt/pepper
  • 0.5 teaspoon hot sauce
  • 1.5 cups cheddar cheese (shredded)
  • 1.5 cups cheddar cheese (shredded)
  • Fresh Parsley (to garnish)

Instructions 

  • Brown the ground beef in a large skillet over medium-high heat.
  • Sauté the diced onion, bell pepper, and garlic until softened.
  • Add the chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, and chicken broth. Stir well.
  • Cook the macaroni according to package instructions until al dente.
  • Melt butter, mix in flour to make a roux, then gradually add heavy cream and milk to create a creamy sauce.
  • Combine the cooked macaroni, beef mixture, kidney beans, and cheese sauce. Top with additional cheese and garnish with parsley.

Notes

Customize with your favorite toppings like sour cream, diced onions, or extra cheese.
