Ingredients

Salad Ingredients

  • 1 can chickpeas (drained and rinsed)
  • 1 avocado (pitted and diced)
  • 4 ounces feta cheese (crumbled)
  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup fresh parsley (chopped)
  • 1/4 cup fresh mint (chopped)

Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 clove garlic (minced)
  • 1/2 teaspoon dried oregano
  • to taste Salt and pepper

Instructions 

  • Combine chickpeas, avocado, feta, red onion, parsley, and mint in a bowl.
  • Whisk together olive oil, lemon juice, garlic, and oregano. Season with salt and pepper.
  • Pour dressing over salad and toss gently.
  • Serve immediately or chill for later.

Notes

For a spicier kick, add a pinch of red pepper flakes to the dressing.
