Chicken Broccoli Rice Casserole

A comforting baked casserole combining tender chicken, broccoli, rice, and cheesy goodness for a satisfying meal.

Ingredients

Dairy and Seasonings

  • 2 tablespoons butter
  • Salt/Pepper (to taste) Salt and Pepper (to taste)
  • 1 teaspoon Italian seasoning
  • 10.5 oz. Cream of Chicken Soup (condensed)
  • ½ cup milk
  • ½ cup sour cream
  • ½ cup shredded cheddar cheese (separated)
  • ½ teaspoon dried thyme
  • ½ teaspoon garlic powder

Main Ingredients

  • 2 cups diced rotisserie chicken or cooked chicken breasts (or 2 cups diced cooked chicken)
  • 1 ¼ cups white long grain rice (uncooked)
  • 2-3 cups fresh broccoli florets (uncooked)
  • 2 cups chicken broth
  • 2 tablespoons olive oil
  • 1 cup Ritz crackers (crushed)
  • 2 tablespoons melted butter

Instructions 

  • Preheat oven to 350°F. Cook chicken, season with salt, pepper, and Italian seasoning. Sauté chicken in butter until golden, then set aside.
  • In the same pot, add chicken broth, olive oil, and rice. Bring to a boil, then simmer covered for 6 minutes. Add broccoli, cover, and cook for 9 minutes until rice is tender.
  • Let rice stand covered for 10 minutes. Mix in cooked chicken, cream of chicken soup, milk, sour cream, seasonings, and half the cheese.
  • Transfer mixture to a greased 9x13-inch dish, top with remaining cheese, and bake covered for 15 minutes. Then, sprinkle crushed crackers mixed with melted butter on top and bake uncovered for 10 minutes.

Notes

For extra flavor, add a pinch of paprika or hot sauce before baking.
